Vinification: The red grapes once harvested, are crushed and left to macerate at low temperature for about one night.With this procedure a certain percentage of polyphenols and anthocyanins passes from the skins to the must. Then follows the first fermentation in steel tanks at controlled temperature.The refermentation,which takes place in an autoclave and at controlled temperature, is triggered by inoculating selected yeasts which fermenting the sugar present and added cause overpressure. Once the desired sugar residue is reached,fermentation is stopped with the use of cold.After filtration is the subsequent preparation for bottling.
Colour: Dusty pink colour, with a fine and persistent perlage
Bouguet: Intense, with a light yeasty note, full, floral bouquet of roses and violets
