Vinification:The base wines for Cuvée Prestige are obtained in compliance with a rigorous winemaking protocol. The hand-picked grapes are coded by vineyard, chilled in a cold room and selected by experienced cellar staff before whole-bunch pressing. Alcoholic fermentation is in temperature-controlled steel tanks, where the wines remain until the following March. Seven more months of ageing are necessary for the wine to clarify, mature and disclose the character of its vineyard of provenance. Subsequently, the wines are carefully blended with reserve wines from the best vintages (from 20% to 30%) in the magic ritual of making the cuvée. It is this special technique that imbues Cuvée Prestige with its distinctive character. The essence of Franciacorta made the Ca'del Bosco way. Only after a maturation period that averages 25 months will this Franciacorta be ready to express all the sumptuous depth of its personality. Disgorgement takes place in the absence of oxygen using a unique system designed and patented by Ca'del Bosco. The procedure avoids oxidative stress or the need for additional sulphites, making Ca' del Bosco Franciacortas purer, more appealing and longer lived. Finally, every bottle is given an individual marking to ensure its traceability.
Colour: Straw yellow with gold nuances.
Bouquet: Unique aromatic profile with spicy notes of spearmint and fresh oregano leaf that pop to the top. Beyond those vertical aromas are heavier tones of stone fruit, honeydew melon and blanched almond.

170 plots planted with Chardonnay, average age: 28 years, in the Municipalities of Erbusco, Adro, Cazzago San Martino, Corte Franca, Iseo and Passirano. 5 plots planted with Pinot Bianco, average age: 29 years, in the Municipality of Passirano. 43 plots planted with Pinot Nero, average age: 19 years, in the Municipalities of Erbusco, Provaglio d??Iseo and Passirano.
Vinification
The base wines that go into Cuv??e Prestige are the fruit of accurate cluster selection and expert vinification, carried out in line with the Ca?? del Bosco Method. The grapes are hand-picked and placed in small crates, graded and chilled. Every bunch is selected by trained eyes and hands, just before they go through our exclusive ??berry spa??, a special whirlpool-like wash for grape bunches, consisting of three soaking tanks, followed by thorough drying in a special tunnel. After pressing in an oxygen-free press, all the musts of the base wines ferment in temperature-controlled stainless steel tanks, where they remain until the following month of March. The wines take seven months to settle, mature and express the very best characteristics of their vineyards of origin. The wines are then carefully assembled in the ??magical ritual?? that creates the cuv??e. Only after aging on the lees for at least 2 years will this Franciacorta express all its richness and identity. Disgorgement is carried out in an oxygen-free environment, using a proprietary process designed and patented by Ca?? del Bosco. This procedure prevents oxidative shocks and makes it unnecessary to add sulfites, making our Franciacortas purer, more appealing and longer lived. Finally, every bottle is marked with a unique identifier to ensure its traceability.
